Recipe: Quick quinoa nettle salad


Quinoa is a nutritious plant originally from South America. Its high content of carbohydrates and the fact that it is gluten-free make it a popular ingredient for a wide range of dishes. It even grows in Finland under the famous midnight sun! Here is a recipe for quick salad made with quinoa and the superfood nettle.

Ingredients (for four):

3dl of organic quinoa (e.g. from Sunspelt)
1 tablespoon nettle powder (e.g. from
Helsinki Wildfoods)
1 block of feta cheese (or vegan alternative)
1 red onion
cherry tomatoes
½  teaspoon of nettle salt (e.g.
Helsinki Wildfoods)
lemon or lime juice
fresh herbs (coriander or parsley)
2 tablespoons of olive oil


  1. Thoroughly rinse 3 dl of quinoa with water.
  2. Place the quinoa in a bowl and cover it with water.
  3. Add two tablespoons of olive oil.
  4. Let the quinoa absorb water for five minutes.
  5. Pour the water and roast the quinoa on a pan for five minutes while stirring.
  6. Add the nettle powder and fry the quinoa for another couple of minutes.
  7. Take if off the stove and let it cool down.
  8. Cut the cheese, the onion, the tomatoes and the cucumber.
  9. Mix everything in a bowl and add some nettle salt, black pepper, lime or lemon juice and the fresh herbs.
